In trial, people lost twice as much weight by ditching ultraprocessed food

In a small randomized controlled trial, people lost twice as much weight when their diet was limited to minimally processed food compared to when they switched to a diet that included ultraprocessed versions of foods but was otherwise nutritionally matched.

The trial, published in Nature Medicine by researchers at University College London, adds to a growing body of evidence that food processing, in addition to simple nutrition content, influences our weight and health. Ultraprocessed foods have already been vilified for their link to obesity—largely through weaker observational studies—but researchers have struggled to shore up the connection with high-quality studies and understand their impact on health.

The ultraprocessed foods researchers provided in the new trial were relatively healthy ones—as ultraprocessed foods go. They included things like multigrain breakfast cereal, packaged granola bars, flavored yogurt cups, fruit snacks, commercially premade chicken sandwiches, instant noodles, and ready-made lasagna. But, in the minimally processed trial diet, participants received meals from a caterer rather than ones from a grocery store aisle. The diet included overnight oats with fresh fruit, plain yogurt with toasted oats and fruit, handmade fruit and nut bars, freshly made chicken salad, and from-scratch stir fry and spaghetti Bolognese.

While the level of processing differed between the diets, the large-scale nutrition content—fat, protein, carbohydrates, fiber—were similar, as was the proportions of fruits, vegetables, dairy, and starchy food. Overall, both diets adhered to the dietary guidance from the UK government, called the Eatwell Guide (EWG).

Diet processing

The trial had a crossover design, meaning that participants were randomly split to start out on either the ultraprocessed food (UPF) diet or the minimally processed food (MPF) diet. They stayed on their starter diet for eight weeks, then took a break, and switched to the other diet. For both diets, food was delivered directly to the participants’ homes. Participants ate what they wanted and, mostly, didn’t seem to cheat by sneaking other food, based on food diaries and reported adherence.

Fifty participants completed at least one diet, while 43 completed both diets. The participants were mostly women, with a mean age of 43, and all had a body mass index categorized as overweight or obesity. At the start of the trial, ultraprocessed foods made up, on average, nearly 70 percent of the participants’ standard diets, and they were not adhering to the EWG recommendations.

Did ancient people practice equality? While stereotypes may suggest otherwise, the remains of one Neolithic society reveal evidence that both men and women, as well as locals and foreigners, were all equal in at least a critical aspect of life: what they ate.

The Neolithic saw the dawn of agriculture and animal husbandry some 6,000 years ago. In what is now Valais, Switzerland, the type and amount of food people ate was the same regardless of sex or where they had come from. Researchers led by Déborah Rosselet-Christ of the University of Geneva (UNIGE) learned this by analyzing isotopes in the bones and teeth of adults buried in what is now called the Barmaz necropolis. Based on the 49 individuals studied, people at the Barmaz site enjoyed dietary equality.

“Unlike other similar studies of Neolithic burials, the Barmaz population appears to have drawn its protein resources from a similar environment, with the same access to resources for adults, whether male or female,” the researchers said in a study recently published in the Journal of Archaeological Science: Reports.

Down to the bone

To determine whether food was equal among the people buried at Barmaz, Rosselet-Christ and her team needed to examine certain isotopes in the bones and others in the teeth. Certain types of bone either do or do not renew, allowing the content of those bones to be associated with either someone’s place of birth or what they ate in their last years.

Being able to tell whether an individual was local or foreign was done by analyzing several strontium isotopes in the enamel of their teeth. Tooth enamel is formed at a young age and does not self-renew, so isotopes found in enamel, which enter it through the food someone eats, are indicative of the environment that their food was from. This can be used to distinguish whether an individual was born somewhere or moved after the early years of their lives. If you know what the strontium ratios are at a given site, you can compare those to the ratios in tooth enamel and determine if the owner of the tooth came from that area.

While strontium in tooth enamel can give away whether someone was born in or moved to a certain location at a young age, various isotopes of carbon, nitrogen, and sulfur that also come from food told the research team what and how much people ate during the last years of their lives. Bones such as the humerus (which was the best-preserved bone in most individuals) are constantly renewed with new material. This means that the most recently deposited bone tissue was put in place rather close to death.

Something for everyone

Near the valley of the Rhone River in the Swiss Alps, the Barmaz necropolis is located in an area that was once covered in deciduous forests that villages and farmland replaced. Most of the Barmaz people are thought to be locals. The strontium isotopes found in their teeth showed that only a few had not lived in the area during the first few years of their lives, when the enamel formed, though whether other individuals moved there later in life was more difficult to determine.

Analysis of the Barmaz diet showed that it was heavy on animal protein, supplemented with some plant products such as peas and barley. The isotopes analyzed were mostly from young goats and pigs. Based on higher levels of particular carbon and nitrogen isotopes found in their bones, the researchers think these juvenile animals might not have even been weaned yet, which means that the people of this agrarian society were willing to accept less meat yield for higher quality meat.

Rosselet-Christ’s most significant find was that the same median fractions of certain carbon, nitrogen, and sulfur isotopes were found in the bones of both men and women. Whether these people were local or foreign also did not matter—the values of these isotopes in those with different strontium isotope content in their tooth enamel was also the same. It seems that all adults ate equal amounts of the same foods, which was not always the case in Neolithic societies.

“The individuals buried at Barmaz—whether male or female—appear to have lived with equal opportunities, painting a picture of a society with egalitarian reflections,” the research team said in the same study.

Other things in this society were also equal. The dead were buried the same way, with mostly the same materials, regardless of sex or if they were locals or foreigners. While a society this egalitarian is not often associated with Neolithic people, it shows that some of our ancestors believed that nobody should be left out. Maybe they were much more like us than we think.

The next food marketing blitz is aimed at people on new weight-loss drugs

As new diabetes and weight-loss drugs help patients curb appetites and shed pounds, food manufacturers are looking for new ways to keep their bottom lines plump.

Millions of Americans have begun taking the pricey new drugs—particularly Mounjaro, Ozempic, Wegovy, and Zepbound—and millions more are expected to go on them in the coming years. As such, food makers are bracing for slimmer sales. In a report earlier this month, Morgan Stanley’s tobacco and packaged food analyst Pamela Kaufman said the drugs are expected to affect both the amounts and the types of food people eat, taking a bite out of the food and drink industry’s profits.

“In Morgan Stanley Research surveys, people taking weight-loss drugs were found to eat less food in general, while half slashed their consumption of sugary drinks, alcohol, confections and salty snacks, and nearly a quarter stopped drinking alcohol completely,” Kaufman said. Restaurants that sell unhealthy foods, particularly chains, may face long-term business risks, the report noted. Around 75 percent of survey respondents taking weight-loss drugs said they had cut back on going to pizza and fast food restaurants.

Some food makers aren’t taking the threat lightly. On Tuesday, the massive multinational food and beverage conglomerate Nestlé announced a new line of frozen foods, called Vital Pursuit, aimed directly at people taking GLP-1 weight-loss drugs (Wegovy and Ozempic). Nestlé—maker of DiGiorno frozen pizzas and Stouffer’s frozen entrées—said the new product line will include frozen pizzas, sandwich melts, grain bowls, and pastas that are “portion-aligned to a weight loss medication user’s appetite.” The frozen fare is otherwise said to contain fiber, “essential nutrients,” and high protein, food features not specific for people on GLP-1 drugs.

“As the use of medications to support weight loss continues to rise, we see an opportunity to serve those consumers,” Steve Presley, CEO of Nestlé North America, said in the product line announcement. “Vital Pursuit provides accessible, great-tasting food options that support the needs of consumers in this emerging category.”

Nestlé isn’t alone. At the end of last year, WeightWatchers began offering a membership program for people taking GLP-1 drugs. In January, meal delivery service Daily Harvest announced its “GLP-1 Companion Food Collection.” And last month, GNC announced a “GLP-1 support program” for people on the drugs, which includes a collection of various supplements, coaching, and consultations.

The companies seem to be heeding the advice of analysts. Morgan Stanley’s report noted that food makers can adapt to people’s changing diets by “raising prices, offering ‘better for you’ or weight-management products, or catering to changing trends with vegan or low-sugar options.” Kaufman noted that some companies are already adjusting by selling smaller packages and portions.
